Ice and snow are predicted for this afternoon into tomorrow. So everyone here has gone off in different directions to accomplish necessary errands beforehand.
Personally, we think it is all silly. Why not curl up next to a warm heater like we do and only get up for meals.
Mama is off to the post office where the last of the Shake Your Bootie prizes will be mailed to their respective winners.
Then she is coming home to make lasagna for dinner. Green chili may or may not be involved.

Just checked the forecast for the weekend. Looks like the cold will be continuing into the first of the week. It might be time to put out some luminaries to freeze up. It is supposed to be up to 30 degrees today and then cold and snowy for a while. If I could send this weather up to Anchorage I would.
The kittens have discovered the waste paper baskets and think they are fine places to hide out. I have given up trying to stop them. They are relentless. I am relenting. sheesh. I guess I will have to think of an name other than Staff. Maybe something like patsy or wimp or…well you get the idea.

The kids are outside playing in the snow, as if this teensy bit of white counts as snow. It is supposed to continue all day and into the evening, then turn to rain tonight and all day tomorrow. After that, vaca will be over, so I didn’t bother to check. Thank Dog all of the outdoor stuff got done yesterday. As for the indoors, it looks like chaos. That big tree is gone, as is the little one. Where to? Heaven only knows.

Good day to everyone and especially ML.
Staff: when my kittens first arrived, I immediately got an empty trash container and laid it on its side knowing that they would play hide-and-go seek with it.
I have been talked into delivering a kitten to Fairbanks at the end of next week. I wanted to visit friends anyway. All I can say is that it better not meow for 7 hours. Family had pre-adopted it based on a photo and visited for 3 days this week but since kitten is on medicine, they could not take it home with them.

It is a chilly, wet, icy, slushy, slippery mess here. We are roasting all kinds of veggies and will be enjoying a warm, cozy night indoors with the ‘rents and T.C. The horses and the chickies are on their own. It feels like forever since we all stayed home together all day and night. They are sad that the holidays are over, but we are not.
They did tell us that Unbroken was excellent, though of course unsettling. If you read the book, you will not be disappointed.

We are shaking our heads over the irony of life.
While watching tv, a commercial came on urging support for Wounded Warriors, the vets who are coming home with devastating injuries. The commercial talked about how these men and women struggle to overcome their injuries and get better
The next commercial was for an upcoming WWF Wrestling event where the competitors will “battle” until one is hurt badly enough to need an ambulance
Is it just us, or is there something inherently wrong with this?

Tupper’s Maw: Mom’s high school friend is very involved with the Wounded Warrier Project. She runs River House PA. They get vets suffering from PTSD and other wounds out in nature, doing hikes and such. This woman is famous in her own right, having written many books and lecturing about her experiences long-distance hiking. She and her husband spent long periods with their kids in the wilds, when those kids were but babes. Anyways, Mom and Pop purchased tickets for a Valentines dinner dance to benefit River House.

My Friend’s Hot Green Chili
Shopping List:
1 – 2 lbs Pork Country Style Boneless Ribs
1 – 2 White Onions
5 – 6 Cloves of Garlic
14.5 oz Chicken Broth
10 oz Rotel Diced Tomatoes w/Habaneros (hot)
7 oz Regular Diced Tomatoes (about ½ of a can)
10 oz Water
24 oz Chilies Hot (Select – New Mexico – frozen. Can be found at Walmart or King Soopers grocery)
1 teaspoon Cumin (estimate)
1 teaspoon Garlic Salt (estimate)
½ teaspoon of Chicken Bouillon (optional and an estimate)
1 Fire Extinguisher
What to do:
Layer thick sliced white onion and diced garlic in a crock pot with the Port Ribs. Pour in the chicken broth, you may need to add more to cover the ribs, and cook on high for 4 hours.
Once the ribs are cooked remove them from the crock pot. Drain the liquid from the crock pot into a bowl through a colander. Mash the onion and garlic in the colander to get as much liquid flavor out of them as you can. Store the ribs and the broth in the fridge over-night in separate containers.
The next day remove the grease from the top of the broth. Cut the ribs into chunks removing as much fat as possible. Defrost the chiles.
Into a large pot add the following: The ribs, broth, diced tomatoes w/habaneros, regular diced tomatoes, green chiles (even if they are still frozen).
At this point let the mixture heat up. It will be very very HOT tasting. This is where I add extra water (to tame it down). Add more water as needed. Add the garlic salt and cumin to taste. If you desire add the chicken bouillon to season the extra water. I add a little seasoning at a time and let the mixture slow boil for a while before re-tasting and re-seasoning it.
The chilies and the tomatoes need to slow boil/simmer together for at least 4 – 5 hours. The chilies and tomatoes will combine together to make a semi-thick sauce. You can thicken it even more with flour or cornstarch if you desire.
The key is to keep tasting and add seasoning along the way. I know – It is not a scientific recipe…heh!….If you are not a fan of HOT substitute the Hot Habanero tomatoes with Tomatoes w/Green Chilies. And buy the Mild frozen chopped green chilies instead of Hot!
This green chili is best served over a beef and bean burrito w/cheese and a bit of sour cream on the side…burp!

Oh Rio, That is the kind of recipe we use here at the Drew household. When I lost my sense of smell and taste back in 2003 I couldn’t cook for several years because I cooked by taste. Luckily I was old enough that I had some recipes I had made many times and could count on them tasting OK. But any new recipe was a crap shoot.
Speaking of recipes I hear clinking from the kitchen and a kitten (Henry) is missing. I had better go investigate before copying and pasting this great looking recipe.

When I looked in the kitchen Henry was turning away from the sink and he was licking his lips. The bowl that had held Dad’s Mediteranian Salad was licked clean. Really, these kats are part Dog. Raised by wolves I bet. I had emptied the bowl and rinsed it lightly but nothing else. I am not the dishwasher. Mr.Staff is busy watching sports on TV. I left the kitchen and now there is more klinking going on. Maybe if I took the fork out of the bowl I could ignore it more easily.

Howlers. Take a few spoonfuls of tasty beef, chicken or pork shreds mixed with beans, shredded cheese, cooked tomatoes, onions and peppers etc. Plop it in the middle of a big flour tortilla. Start rolling from one side, take the two end flaps and fold them in, continue to roll up until you have a neat little tortilla package.
Top with Rio’s chili. Yum

There is a storm raging outside. The wind is howling and the snow is going sideways. I am sure glad I am inside and decided to go grocery shopping this afternoon when it was mild and 30 degrees. I didn’t even have to wear my winter coat. I just wore my fleece lined flannel shirt over a turtleneck. (with a hat, a scarf and mittens) and I was fine. We are all ready for some weather!

Mr.Staff just showed me the boneless country style pork ribs he paid big bucks for. They are spare ribs. I swear that man just walks into a store and goes blind. I can’t tell you how many times he has bought low fat ice cream which he then refuses to eat. Many many times. If I had to guess I would say six times. Really. It just makes you wonder doesn’t it?
He says he was sure they were right because there is no such thing as boneless spare ribs. He is sitting there with the package in his hands.

Spare Ribs are very tasty and cook up crispy and wonderful when salted. I still remember Dawson cooking spare ribs once in her house in Whitefish Montana. Oh those were the days.
They are bones with a tiny bit of skin covering one side and a very little bit of meat on the other side and they just bake into crispy fatty delishousness when put in the oven at a decent heat setting which I forget right now. There is really very little meat on them but it is pork.
Now country ribs have much tenderer meat. I have no idea how the spare ribs taste when they don’t have the bones inside them to carry the heat and fat to the tiny bit of meat. However I expect I will find out.
I am hungry for spare ribs RIGHT NOW!

I think I will have a little something, not ribs, right now and then off to bed.
Henry is waiting for his slurp. Don’t forget his ears and nose. They need cleaning still and he won’t let me touch them unless he is asleep.
