Good jet-lagged morning all.
The trip was wonderful, literally, filled with wonder and a different view around every mountain. Alaska beauty is almost overpowering. One of our guides said it well: Alaska enters your heart and won’t let go. It tugs at you until you return…
Mom will post pictures after she gets organized. That may take some time.
Loved the e-story. I like getting to know Chet better with each new work. Good job, Spence.

Bluecat, welcome back, looking forward to pictures soon.
BSD, Chicken Pot Pie, a little labor insensive, but worth it.
Put whole chicken in heavy cast iron pot, partially cover with organic chicken broth. We like to use a stewing hen if possible, as there is more fat and the meat is more tasty. If using a regular fryer, add a little butter on top of the chicken. Cook about 2-3 hours in 325 degree oven in covered pot. Less time required for fryer. Remove chicken, set aside and remove all meat from bones after chicken has cooled.
Thicken liquid to make a gravy (flour or corn starch, your choice). Add veggies of your choice and the diced chicken meat. We use potatoes, carrots, beans and corn. You can also use the frozen mixed veggies and just add your own diced potatoes. Partially cook, 15-20 minutes, then put mixture into casserole dishes. Add pie crust or bisquick biscuits to the top and bake @ 350 till topping is done. One whole 3-4 lb chicken will make enough for 2 or 3 casserole dishes, serving 6-8.

Bluecat: Alaska’s beauty is almost indescribable. Glad you had a great adventure and are home safe and sound.
HOH: yes, animals are the best alarm clocks with their wet littles noses. They even work when the power goes out in the middle of the night–they got me to work plenty of times without being late. However, the concept of weekends and sleeping in is hard for them to master.

Retirees that have a Husky that has to get to the dog park before the sun comes up in the summertime need an alarm clock. I keep telling mom to hang in there just a little bit longer. It will get cooler and she won’t have to get up quite so early.

Just finished supper. Now that it is really hot out I decided to make chicken soup with dumplings. I make the Polish dumplings. Soft and fluffy floating on top of the soup. Not the Norwegian ones that are hard and lumpy and sink. I also used potatoes, corn, carrots, onions and basil from our garden. The potatoes are HUGE this year. Must be the manure we put in the garden for the first time in about 15 years.
It was yummy and my tummy is full full full.
Mr.Staff makes Chicken potpie. But he uses boneless skinless chicken breasts. It would never ever get made if he had to go to all the work of roasting. It is good anyway it is made.

Buuurrp!….We just got done with eating our supper…snort!…Spicy chicken stir-fry from left-over fajitas…heh!heh!…Beau likes it spicy. He gobbled up the chicken and then licked his bowl clean. I had to gobble up my food too so he wouldn’t get any ideas about licking my bowl out…grunt!

Staff, tell Mr. Staff that he should try some boneless thighs too. They are more tasty than breasts and less expensive. Still the whole chicken is even better.

Oh BlueCat – such lovely pictures. And we do agree with the sea lion/Pug correlation. Only thing is, sea lions don’t have curly tails. But they do snort, grump, and grumble. (and poot)
We are all set up and loaded for bear – not BearSpiritDog, or the grizzlies that have been attacking everything in sight at Yellowstone, but ready for a super duper show.
Must remember to take pictures of the booth tomorrow before the show starts. And now – time for bed. Show day starts early and ends late.
