Lincoln’s Dogs

“Speaking of Lincoln,” Bernie says, “he had a mustard-colored dog named Fido. A real ol’yaller who followed him around Springfield. And one of the first dogs ever photographed. But the Lincolns left Fido behind with a neighbor when they went to Washington, something about Fido being frightened by all the cannon fire and bell ringing that was going to happen on the trip.”

Cannon fire? Bell ringing? Sounds good to me.

“When they brought Lincoln back to Springfield, Fido was still alive. He went back to his original home that day and spent time with the mourners. There was also a White House dog named Jip who often ate lunch with Lincoln, sometimes on his lap so he’d be in a good spot for treats.”

    The President was particularly fond of kittens, and was known to always rescue animals from adversity.

    Tony, a Newfoundland Dog, was a mascot for 104th Ohio during the Civil War. That unit also had white bulldog, a cat and a tamed raccoon. They must have really liked animals.

    Melanie, Thank you for the eagle update. We tried to watch it yesterday, but two of the babies were laying right on the edge, not under the parent, and it was making Barb nervous. She wants to see them huddled close together in the middle.

    We are loving all the C.W. little-known facts that you all have been posting. Dima thinks he should have been named “Fido” now. And all those mascots with the Ohio 104th ? What a cool regiment. Didn’t anyone have a Siberian Husky?
    T&G: We often wonder what “Founding Fathers” would think..also Lincoln, and lots of others. If you can, watch the first episode of Ken Burns Civil War, in light of today’s political divides. Seems like the more things change, the more they stay the same.
    Eaglets are growing by leaps and bounds. Still look very awkward when they move though, don’t they?

    Gilly, I am so excited about tonight. Tell your mama to keet a close watch on you (and Tups) because Corgis are one of Barb’s favorites, next to me, of course.

    Barb found a really, really cool gift for Lily’s B-day, to go along with her salad box garden. It is by Time & Again, and is called a Garden Bag Gift Set. It is a little white canvas carrying case that has 2 handles and little pockets all the way around. It has 3 wood handled child-size gardening tools, a Lemongrass & Lavender hand soap, a nail scrubbing brush, and hand lotion. There is also room to put seed packs in the extra little compartments. Barb is SO EXCITED about finding this!

    Another thing along the gardening line – just heard of a neat growing idea to cut down on weeding and bending over. You get a bale of straw, set it on end so the cut ends are sticking up (not the smooth ends), pour a little soil or growing medium on top, just enough to anchor the seeds, then plant. Evidently the roots go down into the straw and get enough moisture and nutrients to grow. Just add a little organic fetilizer and water periodically. We are going to try it for zucchini, as they take up a lot of room. One bale for 2 plants. Sound like a good idea, anyone?

    Fellow Siberians; We didn’t arrive in America from Siberia until 1908 so we missed the madness that is known as either the Civil War or the War of Northern Aggression. Our first landing spot in North America was Nome, Alaska, which I have always thought was way cool. A Historical Marker should be placed on the beach at Nome where we first set our paws down on American soil.

    T&G I will be arriving at your house early to help with the turkey, prime rib, and lamb. Your mom has nothing to worry about. We will have it all under control.

    Altho we gotta admit, a friend of ours posted a pic of their baby on a cupcake FB page, and then kept hassling all of us and threatening to “un-friend” anyone who didn’t vote for their baby’s pic. It was very annoying. We voted for the pic before all the reminders started coming. Then we voted for all the other pics (especially the doggie pics) !!!

    Mom emailed Melanie one of the pictures and she did some stuff and told Mom what she did and voila! The picture got its color back.

    As a family we are watching “Doc Martin” and “The Closer”. First being Netflix instant and the second Netflix DVD.

    I am also watching (as funny as it seems even though I go to bed early, I’m the latest in the house) “Farscape”.

    I tried getting “The Event” no doing. Also the one that is the Texas ranger, no doing. What else are people watching?

    We watched the new Upstairs Downstairs…did anyone else? We liked it.
    We tell you that so as not to be embarrassed by what else we really love to watch .. (blush) Survivor! Dad hates it (refuses to watch) but its our guilty pleasure with mom. We make a big deal of it. She eats or drinks something special, and we get Frosty Paws.
    There are a few must-watch sitcoms in our house too. Modern Family being the current fav, followed closely by Raising Hope. Oh and we love Chuck.
    And our #1 T.V. show is Burn Notice.

    When doing a walkabout this YSAS (someday soon I’d like that to be YFAS), my tour consisted of where different shows were shot. the stairs at the Courthouse, Time Square for a new one called “Smash” and real crime scenes.

    Interesting take on NYC.

    TV shows. Hmm…The Event, Hawaii Five-0 The Good Wife, Blue Bloods are some must sees around here. Oh, and loved the 5 seasons of Friday Night Lights. The final season is due to be repeated on NBC on the 15th. Many other shows we have missed can be picked up later on Netflix or at the library – such as Mad Men, etc; which is great because then there are no commercials to suffer through.

She called her doctor and is now waiting for a call back because they never answer their phones those doctors….grunt!… This new medicine is not working out. She said she read all the side effects and she has most of them right now….gah!misery!

Around here we’re real big on The Big Bang Theory — we think the humor is quite intelligent. We also like American Pickers, because they’re from Iowa, just like Mom and Dad.

    Wolfie: We’re thinking of your boys — hope a third party has a good impact on them.

    Stanley cup playoffs are on.

    I watch Survivor with Mr. Staff. The man in this house leaves the room when it comes on. I also watch Coronation Street which is the longest running soap opera in Britain. I’ve been watching it since 1993 when I moved to Canada.

    I painted the primer coat, finally(!), in the bedroom.

    Now I’m hungry and ready to party. I’ll be waiting for you, Wolfie.

    Dawson – The previous Sabres’ owner was Tom Golisano. He was good, saved the team from bankruptcy, but never wanted to pay the talent so we kept losing the good guys. Terry Pegula said his goal (ha ha) is to win a Stanley Cup and all of Buffalo-Western New York-Southern Ontario believes him and is excited. We have waited so long. Our team is good, not great, but for the next season I think we’ll see some new players.

    Ok – look out, this dish is hot.

    This one is perfect with any of the main dishes, and is the perfect way to use the first gorgeous veggies of the season

    Awesome Dawson Double Squash Roast

    4 small, new zucchini, sliced
    4 small, new yellow squash, sliced

    Optional add ins, pick a few to toss in:
    1 cup cherry tomatoes
    1 cup baby green beans cut into 2 inch lengths
    ½ cup julienne green, red or yellow pepper
    ½ cup chayote cut into thin slices

    1 TBL fresh lemon thyme, minced
    1 tsp lemon zest, grated
    lemon juice
    olive oil
    salt and pepper to taste

    Preheat over to 425 degrees.
    Place all veggies in a bowl, add just enough olive oil to coat all pieces. Add minced lemon thyme and toss.
    Lay veggies out on rimmed cookie sheets that have been sprayed with non-stick coating. Sprinkle with salt and pepper to taste.
    Roast in hot oven for 25-30 minutes, stirring and flipping halfway through cooking time.
    Place veggies in serving bowl, give a squirt or two of lemon juice and toss. Sprinkle with lemon zest. (You can just grate the yellow skin off a freshly washed lemon using the fine side of your grater)

    Just for you Barb:

    Elegant Caramelized Brussels Sprouts

    1 lb small Brussels sprouts
    2 TBLS sugar
    1 TBL butter
    2 TBLS sherry or red wine
    ¼ cup warm water
    ½ tsp salt

    Trim outer leaves and stems off Brussels sprouts. (Larger sprouts can be cut in half). In a large, heavy covered skillet, heat the sugar over medium heat. As soon as it starts to melt, reduce heat. When sugar just starts to brown, add butter. When it melts, add sherry. Cook one minute. Add the warm water and salt. Add sprouts, bring to a boil and reduce heat again to simmer. Cover and cook for 6 minutes. Uncover, cook and stir for 15 more minutes until most of the liquid evaporates and sprouts are hot, soft and well glazed. (If the mixture seems too dry, you can add more butter, sherry or water)

    Maggie’s RAT-ta-touille

    2 eggplants, peeled and large diced
    2 medium zucchini, large diced
    2 medium yellow squash, large diced
    2 medium onions, diced
    8 cloves garlic, thinly sliced (do not chop)
    6 TBLS good fruity olive oil
    2 TBLS fresh oregano leaves
    salt and pepper to taste

    1 28 oz can whole peeled Italian tomatoes
    ¼ cup FRESH basil – dry will not be as good
    1 TBL capers

    Preheat oven to 425. Lightly oil two large, rimmed cookie sheets.
    In a large bowl, combine the eggplant, zucchini, yellow squash, onion and garlic. Add olive oil, oregano and salt and pepper. Toss to coat and spread out onto cookie sheets.
    Roast in hot oven for 30 -40 minutes. Stir and flip, halfway through cooking time, and rearrange the sheets in the oven, reversing which was on the top shelf.
    When done, the veggies should be lightly browned.
    In the bowl that the eggplant and squash were tossed, pour all contents of the can of tomatoes. Break tomatoes up into about 1 inch pieces.
    Add the hot cooked veggies, basil and capers. Toss to blend.
    Let mixture set for at least an hour to blend flavors. May be served at room temp, warm or cold. (Once the tomatoes are in, do not cook the mixture – this is what makes it too soft and unpalatable. Simply warm it lightly in microwave or on stovetop to desired temp.)

    And for our friends with the poofy tails….

    We sometimes just have this for dinner instead of as a side dish, but it does go very well with prime rib or lamb. Kind of a Yorkshire Pudding type of dish, but so much better. For a really decadent treat, top with hollandaise or béarnaise sauce or mushroom sauté.

    Poodle Fierce French Toast

    6 oz cream cheese
    1 lb bag frozen chopped spinach –thawed and squeezed dry
    3 shallots, minced
    1 TBL butter
    ¼ tsp nutmeg
    salt and pepper to taste

    12 slices of your favorite type of bread
    4 eggs
    1 cup milk
    1 tsp vanilla

    Place cream cheese in mixing bowl and allow to soften to room temp.
    Brown shallots in butter until soft. Add well squeezed out spinach, toss and heat for 2 minutes. Add spinach mix to cream cheese, add nutmeg and stir until well blended. Add salt and pepper to your own preference.

    Place 6 slices of bread flat in a well greased casserole or baking dish. Spread the spinach, cheese mixture evenly over each slice. Top with the other six slices of bread.

    Beat the eggs until foamy, add milk and vanilla. Pour over the bread slices, cover with plastic wrap and refrigerate for 3 or more hours.

    Remove plastic wrap, place casserole in 350 degree oven and bake for 30 minutes, or until bread is puffy and browned. You may broil the top for a minute or two if you wish, but be careful not to scorch.

    For all the Plunderers, this one is for you from that children’s’ song:

    Make new friends,
    But keep the old
    One is Silver
    And the others Gold

    Silver and Gold

    2-3 cups julienne cut parsnips (the silver)
    2-3 cups julienne cut carrots (the gold)
    ¾ cup orange juice
    ½ cup “craisins” (dried cranberries) *
    ½ tsp ground ginger
    2 firm pears –peeled and sliced, avoiding the core
    3 TBLS brown sugar’
    2 TBLS butter
    1/3 cup pecans, pieces or halves

    Place carrots and parsnips in a large, covered skillet with orange juice, craisins and ginger. Bring to a boil, reduce heat and simmer covered for about 8 minutes, or until veggies are hot and slightly soft.
    Remove cover; add pears, brown sugar, and butter. Cook and stir gently for about 3 minutes until everything is coated with the buttery sugar glaze. Toss in pecans, stir. Serve immediately, while piping hot.

    * you can use a cup of fresh cranberries, but they will make it more tart

    She used to enter a lot of cooking contests for fun, and she did win some. Wish she could win the Grandaddy of them all – the Pillsbury Bake Off – now THAT is some kind of prize!

Drives us Corgis CRAZY. We polish off our dinners in no time – Gilly even has a “slow down” bowl, and she still eats pretty fast. And we finish and Callie is just eating her fifth or sixth nugget.

    Oh, darn it all. We missed all the fun but I had to stay and help Dad with his taxes. Finding and collating all the receipts. And then our brother in Chi-town called us and so we were busy all night.

    I copied the recipes and the one with the parsnips and carrots looks plenty good. And I love the Awesome Dawson Double Squash roast does look awesome. I will just have to try them at home.
